My dear yoga students,
In recent months, the high demand from my students for my recipes has encouraged me to write. I started writing the first cooking e-book this summer. It is based on your favorite recipes.
In the meantime, I will post some recipes via the blog. I present to you here a great classic that you love, the banana bread.
For this recipe you will need :
2 large ripe bananas
76g unsalted butter or coconut oil
135g sugar
2 beaten eggs
1tsp vanilla extract
1 pinch of salt
1/2 tsp baking soda and 1/2 tsp baking powder or 1 sachet of baking powder
187g flour
65g of topin of your choice
Please follow the steps below to make your bread :
Heat up your oven to 180 degrees.
Start by crushing the bananas with a fork until you obtain a banana puree. If you want a vegan recipe, mash 4 bananas and remove the eggs from the recipe.
Note : that it is important to make the recipe with very ripe bananas otherwise you will not get banana bread.
Add melted butter or coconut oil to the banana.
Mix the sugar, eggs (for the non-vegan recipe), vanilla extract, salt and baking powder. Add it to the previous mixture.
Note : It is perfectly possible to prepare it without sugar. Especially if you add chocolate. It is tasty enough.
Add the flour to the mixture. For a gluten-free recipe I use gluten-free bread flour.
You can add chocolate, nuts, fruits... whatever you want in this recipe. Personally, I love it with nuts or with chocolate.
Oil your mold with before pouring the mixture or or line your dish with baking paper.
Bake for 50 to 60 minutes depending on the oven. Monitor the cooking by sticking the tip of a knife into the bread. Does it come out wet ? Leave it in the oven, otherwise take it out.
Let it cool before enjoying it. The next day it is even better. It can be stored for 5 days in the refrigerator.
